  • 1 medium cauliflower chopped into florets
  • 3 cloves garlic minced
  • 1 tablespoon Italian seasoning
  • 1 2/3 cups mozzarella cheese low moisture
  • 1/2 cup Parmesan cheese grated
  • 2 large eggs

Method
 

  1. Preheat your oven to 400°F (200°C). Chop the medium cauliflower into florets and place them in a food processor. Pulse until the texture resembles rice or small grains.
  2. Transfer the riced cauliflower to a microwave-safe bowl. Cover with a damp paper towel and microwave for about 5-6 minutes until tender. Let it cool slightly.
  3. Once cooled, use a clean kitchen towel or cheesecloth to squeeze out as much moisture as possible from the cauliflower. This step is crucial to achieving a crispy crust.
  4. In a mixing bowl, combine the drained cauliflower, minced garlic, Italian seasoning, mozzarella cheese, Parmesan cheese, and eggs. Mix until everything is well combined.
  5. Line a baking sheet with parchment paper. Spread the cauliflower mixture onto the parchment, shaping it into a round or rectangular pizza crust. Aim for about 1/4 inch thickness for the best texture.
  6. Bake the crust in the preheated oven for about 25-30 minutes, or until it turns golden brown and firm to the touch.
  7. Once baked, remove the crust from the oven and add your favorite toppings. Go classic with marinara sauce, mozzarella cheese, and pepperoni, or get creative with your favorite veggies and herbs.
  8. Return the topped pizza to the oven and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
