- Start by washing and peeling the russet potatoes. Cut them into even-sized strips, about ¼ to ½ inch thick.
- Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
- In a small bowl, combine the salt, smoked paprika, Italian seasoning, garlic powder, onion powder, ground black pepper, and cayenne pepper. Mix well.
- Heat the oil to 350°F (175°C) in a deep fryer or large pot, using a frying thermometer.
- Carefully add a handful of soaked potatoes to the hot oil and fry for about 5-7 minutes until golden brown and crispy.
- Remove the fries from the oil with a slotted spoon and drain on paper towels. Sprinkle with Cajun seasoning while hot.
- Serve hot with your favorite dipping sauces and enjoy!
