Ingredients
  

For the Cajun Fries:
  • 5 pounds russet potatoes washed and peeled
  • 2 quarts fry oil canola or peanut oil
  • 1 tablespoon salt
  • 1 tablespoon smoked paprika
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper

  • Deep fryer or large heavy pot
  • Frying thermometer
  • Slotted spoon
  • Paper towels

Method
 

Instructions
  1. Start by washing and peeling the russet potatoes. Cut them into even-sized strips, about ¼ to ½ inch thick.
  2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
  3. In a small bowl, combine the salt, smoked paprika, Italian seasoning, garlic powder, onion powder, ground black pepper, and cayenne pepper. Mix well.
  4. Heat the oil to 350°F (175°C) in a deep fryer or large pot, using a frying thermometer.
  5. Carefully add a handful of soaked potatoes to the hot oil and fry for about 5-7 minutes until golden brown and crispy.
  6. Remove the fries from the oil with a slotted spoon and drain on paper towels. Sprinkle with Cajun seasoning while hot.
  7. Serve hot with your favorite dipping sauces and enjoy!

Notes

  • For a healthier option, try baking the fries instead of frying.
  • Adjust cayenne pepper to control the heat level.
  • Leftover fries can be stored in the refrigerator for up to 3 days.
