Ingredients
  

For the Brownie Layer:
  • 1 cup unsalted butter for brownie layer
  • 4 oz bittersweet chocolate roughly chopped
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup all-purpose flour

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1.5 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips

Method
 

Method: Brookies
  1. Step 1: Prepare the Brownie Layer: Preheat your oven to 350°F (175°C). In a microwave-safe bowl, combine the chopped bittersweet chocolate and 1 cup of unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Let it cool slightly.
  2. Step 2: Mix the Brownie Ingredients: In the bowl with the melted chocolate mixture, stir in the granulated sugar, light brown sugar, vanilla extract, and salt until well combined. Add the eggs, one at a time, mixing well after each addition. Gradually fold in 1 cup of all-purpose flour until just combined. Set aside.
  3. Step 3: Prepare the Cookie Layer: In a separate mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until light and fluffy. Add the vanilla extract and the egg, mixing until fully incorporated.
  4. Step 4: Combine Cookie Dry Ingredients: In another bowl, whisk together 1 ½ cups of all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the semi-sweet chocolate chips.
  5. Step 5: Assemble the Brookies: Line a baking sheet with parchment paper. Pour the brownie batter onto the lined sheet, spreading it evenly. Then, drop spoonfuls of cookie dough on top of the brownie layer, covering it completely. Use a spatula to gently spread the cookie dough if necessary.
  6. Step 6: Bake: Bake in the preheated oven for 25-30 minutes, or until the cookie layer is golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake, as you want that fudgy brownie center!
  7. Step 7: Cool and Serve: Once baked, remove from the oven and let the Brookies cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve!

Notes

  • Store Brookies in an airtight container for up to 4 days at room temperature.
  • Freeze Brookies individually wrapped in plastic wrap for up to 3 months.
