  • 1 cup flour
  • 1 cup powdered sugar
  • 1 dash salt
  • 6 tablespoons butter cold and cut into pieces
For the Filling:
  • 2 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Method:
  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9x9 inch baking pan with cooking spray or line it with parchment paper.
  3. In a mixing bowl, combine flour, powdered sugar, and salt. Add cold butter and work it into the mixture until it resembles coarse crumbs. Press into the prepared pan.
  4. In another bowl, combine blueberries, lemon juice, granulated sugar, vanilla extract, and cinnamon. Gently toss the blueberries.
  5. Spread the blueberry mixture over the crust in the baking pan.
  6. Mix remaining flour and powdered sugar, add butter if necessary, and sprinkle over the blueberry layer.
  7. Bake for 30-35 minutes until the top is golden brown and blueberries are bubbling.
  8. Let cool in the pan for at least 15 minutes, then transfer to a wire rack to cool completely before cutting.

Notes

  • Store in an airtight container for up to 3 days at room temperature.
  • For a healthier option, substitute whole wheat flour.
  • Try using other fruits like raspberries or strawberries for variety.
