Ingredients
  

  • 2 cups all-purpose flour (240g)
  • 3/4 cup sugar (150g)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • 2 cups fresh blueberries (240g)
  • 1 cup water (240g)
  • 2 tsp pure vanilla extract (10g)
  • 3 tbsp oil or unsalted butter (36g)
  • 1 unit egg or flax egg, or 2 tbsp additional water

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your blueberry bread bakes evenly.
  2. Grease your loaf pan lightly with oil or butter, or line it with parchment paper for easy removal.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, baking soda, and cinnamon (if using) until well combined.
  4. In another bowl, mix together the water, vanilla extract, oil or melted butter, and egg (or flax egg). Stir until blended.
  5. Pour the wet mixture into the dry ingredients. Gently fold together until just combined. Be careful not to overmix, as this can result in a dense loaf.
  6. Gently fold in the fresh blueberries, taking care not to break them apart. This will help keep your bread bursting with juicy fruit.
  7. Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes. Then transfer it to a cooling rack to cool completely.
