Black Bean Mushroom Burger (Vegan!)

Ingredients
  

For the Burger:
  • 1 Tbsp ground flax meal
  • 3 Tbsp water
  • 1 small yellow onion
  • 4 cloves garlic minced
  • 8 oz mushrooms Cremini or button
  • 1 Tbsp tamari
  • 1 Tbsp balsamic vinegar
  • 15 oz black beans canned, rinsed and drained
  • 1/2 cup oat flour
  • 1/4 cup old-fashioned rolled oats
  • 3 Tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/4 tsp salt adjust to taste

Method
 

Preparation Steps:
  1. In a small bowl, whisk together 1 tablespoon of ground flax meal with 3 tablespoons of water. Let it sit for about 5-10 minutes until it becomes gel-like.
  2. In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped yellow onion and minced garlic until the onion is translucent and fragrant, about 5 minutes.
  3. Add the chopped mushrooms and cook until they release their moisture and become tender, about 7-8 minutes.
  4. In a mixing bowl, add the sautéed vegetables, the drained black beans, tamari, balsamic vinegar, flax egg, oat flour, rolled oats, parsley, oregano, basil, and salt. Mash and mix everything together until well combined.
  5. Using your hands, form the mixture into burger patties. Aim for about 6 patties.
  6. You can pan-fry or bake the patties. For pan-frying, heat oil in a skillet over medium-high heat and cook the patties for about 5-6 minutes on each side. For baking, preheat your oven to 375°F (190°C) and bake for about 20-25 minutes.
  7. Once cooked, place the Black Bean Mushroom Burgers on your hamburger buns and top with your favorite fresh toppings.

Notes

  • Store cooked burgers in an airtight container in the refrigerator for up to 4 days.
  • Uncooked patties can be frozen for up to 3 months; place parchment paper between each patty.
  • Reheat in a skillet or microwave until warmed through.
