Ingredients

For the Cake:
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter softened
  • 3 large Eggs
  • 1 cup Milk whole or 2%
  • 2 tsp Vanilla extract
  • 1 cup Rainbow sprinkles
For the Frosting:
  • 2 cups Buttercream frosting

Equipment

  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons
  • Spatula
  • 9-inch Round Cake Pans
  • Cooling rack
  • Offset spatula

Method

Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cake bakes evenly and rises perfectly.
  2. Step 2: Prepare the Pans - Grease and flour your 9-inch round cake pans to prevent sticking. You can also line the bottoms with parchment paper for extra assurance.
  3. Step 3: Mix Dry Ingredients - In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside.
  4. Step 4: Cream Butter and Sugar - In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes.
  5. Step 5: Add Eggs and Vanilla - Add in the eggs, one at a time, mixing well after each addition. Then, pour in the vanilla extract and mix until combined.
  6. Step 6: Combine Dry and Wet Ingredients - Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture to keep the batter smooth.
  7. Step 7: Fold in the Sprinkles - Gently fold in the rainbow sprinkles until evenly distributed throughout the batter.
  8. Step 8: Bake the Cakes - Divide the batter equally between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Step 9: Cool the Cakes - Once baked, remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a cooling rack to cool completely.
  10. Step 10: Frost the Cake - Once the cakes are completely cool, spread a layer of buttercream frosting on top of one layer. Place the second layer on top and frost the top and sides of the cake. Decorate with additional sprinkles for a festive touch.

Notes

  • Wrap leftover cake tightly in plastic wrap and refrigerate for up to five days.
  • Freeze cake layers separately for up to three months for later use.
  • Experiment with different types of frosting like cream cheese or chocolate ganache!
