Ingredients
  

  • 1/2 cup pure butter (or optional coconut oil)
  • 1 cup coconut sugar
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons pure vanilla extract
  • 2 large eggs (lightly whipped)
  • 1/2 cup white whole-wheat flour
  • 1/4 teaspoon kosher or sea salt
  • 1 cup chocolate chips (preferably Enjoy Life Mini Chips)
  • 1/2 cup walnut pieces (optional)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line a 9x9 inch baking pan with parchment paper.
  3. Step 3: Melt the butter over low heat.
  4. Step 4: Stir in the coconut sugar and cocoa powder until well combined.
  5. Step 5: Mix in the pure vanilla extract and fold in the lightly whipped eggs.
  6. Step 6: In another bowl, whisk together the white whole-wheat flour and salt, then add to the wet ingredients.
  7. Step 7: Fold in the chocolate chips and walnuts.
  8. Step 8: Pour the batter into the prepared pan and bake for 20-25 minutes.
  9. Step 9: Let cool for 10 minutes before lifting out and slicing.

Notes

  • Store in an airtight container in the fridge for up to a week.
  • Wrap and freeze individual brownies for up to three months.
  • Reheat in the microwave for a warm treat.
