Ingredients
  

  • 1 pound lean beef (sirloin or flank steak, cut against the grain into thin strips)
  • 2 tablespoons oil (avocado oil recommended)
  • 2 teaspoons fresh ginger (minced)
  • 1 tablespoon fresh garlic (minced)
  • 1 large carrot (thinly sliced at a diagonal)
  • 2 cups snow peas (ends trimmed)
  • 1 cup sliced mushrooms (white button or cremini)
  • 1 cup bean sprouts (or other vegetable of choice)
For the Sauce:
  • 1/3 cup tamari or soy sauce (GF or paleo: use coconut aminos)
  • 1/3 cup water
  • 1/3 cup packed brown sugar (or sugar-free alternative)
  • 2 tablespoons hoisin sauce
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons cornstarch

Method
 

  1. Start by slicing your beef against the grain into thin strips. This ensures tenderness in every bite.
  2. In a bowl, whisk together the tamari or soy sauce, water, brown sugar, hoisin sauce, toasted sesame oil, black pepper, and cornstarch. This will be the flavorful sauce that brings everything together.
  3. Heat your wok or skillet over medium-high heat and add the avocado oil. Allow it to get hot before adding the beef.
  4. Once the oil is shimmering, add the sliced beef in a single layer. Let it sear for about 2 minutes without stirring, then flip and cook for another minute or until browned. Remove the beef from the pan and set aside.
  5. In the same pan, add the minced ginger and garlic. Sauté for about 30 seconds until fragrant.
  6. Toss in the carrots, snow peas, and mushrooms. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
  7. Return the cooked beef to the pan and pour the sauce over the mixture. Stir to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
  8. Remove from heat and stir in the bean sprouts. Serve your Beef Stir Fry hot over rice or noodles, and enjoy!

Notes

  • For a lower-sugar option, substitute brown sugar with coconut sugar or maple syrup.
  • Feel free to add more vegetables like bell peppers or broccoli for extra nutrition.
