Preheat your oven to 375°F (190°C) so it’s ready for your assembled dish.

While the beef mixture simmers, open the cans of refrigerated biscuits. Cut each biscuit into quarters. This will help them to absorb the flavors and cook evenly.
In a large mixing bowl, combine the cut biscuit pieces with the beef mixture. Gently toss until the biscuit pieces are well coated.
Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
Sprinkle the Mexican cheese blend generously over the top of the mixture, ensuring every bite will be cheesy and delicious.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the cheese is bubbly and melted.
Once done, remove the Beef Enchilada Bubble Up from the oven. Let it cool for a few minutes before serving. Enjoy it straight from the dish, garnished with fresh cilantro or sliced jalapeños if desired.
