Beef Enchilada Bubble Up

Ingredients
  

  • 1 lb lean ground beef good quality
  • 1 oz taco seasoning (1 package)
  • 1 can tomato sauce (8 oz)
  • 1 can enchilada sauce (10 oz)
  • 2 cans refrigerated biscuits (6 oz each)
  • 2 cups Mexican cheese blend shredded

  • 9x13 inch baking dish

Method
 

  1. Preheat your oven to 375°F (190°C) so it’s ready for your assembled dish.
  2. In a large skillet over medium heat, add the lean ground beef. Cook until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat.
  3. Once the beef is browned, stir in the taco seasoning, tomato sauce, and enchilada sauce. Mix well to ensure the beef is fully coated with the sauces. Let it simmer for about 5 minutes.
  4. While the beef mixture simmers, open the cans of refrigerated biscuits. Cut each biscuit into quarters. This will help them to absorb the flavors and cook evenly.
  5. In a large mixing bowl, combine the cut biscuit pieces with the beef mixture. Gently toss until the biscuit pieces are well coated.
  6. Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  7. Sprinkle the Mexican cheese blend generously over the top of the mixture, ensuring every bite will be cheesy and delicious.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the biscuits are golden brown and the cheese is bubbly and melted.
  9. Once done, remove the Beef Enchilada Bubble Up from the oven. Let it cool for a few minutes before serving. Enjoy it straight from the dish, garnished with fresh cilantro or sliced jalapeños if desired.
