Ingredients
  

  • 1 cup oats any type, such as rolled or quick oats
  • 1 cup seeds a combination of flax seeds, quinoa seeds, sunflower seeds, chia, and sesame seeds
  • 1 cup nuts a mix of walnuts, pecans, hazelnuts, and almonds
  • 2 bananas ripe
  • 2 tablespoons almond butter or peanut butter or coconut oil
  • 2 tablespoons ground flaxseeds source of omega-3 fatty acids
  • 1 teaspoon vanilla adds depth of flavor
  • 2 1/2 teaspoons matcha green tea powder for energy boost
  • 2/3 cup cranberries dried, sweet-tart contrast

Method
 

  1. Begin by measuring out all your ingredients. This will make the mixing process much smoother.
  2. In a large mixing bowl, mash the two ripe bananas until smooth. You want a creamy texture to help bind the bites together.
  3. Add the almond butter (or your choice of nut butter) and vanilla extract to the mashed bananas. Stir until well combined.
  4. In a separate bowl, mix together the oats, seeds, nuts, ground flaxseeds, and matcha powder. This ensures even distribution of flavors and nutrients.
  5. Gradually add the dry mixture to the banana mixture. Stir until everything is fully incorporated. It might take some effort, but keep mixing!
  6. Gently fold in the cranberries, ensuring they are evenly distributed throughout the mixture.
  7. Using your hands, roll the mixture into small balls, about 1-inch in diameter. Place them on a baking sheet lined with parchment paper.
  8. Refrigerate the energy bites for at least an hour. This helps them firm up and makes them easier to handle.
