Ingredients

For the Cake:
  • 1 cup Bananas mashed (about 2-3 ripe bananas)
  • 1 cup Sugar granulated for the cake
  • 1 cup Butter melted for the cake
  • 0.5 cup Butter at room temperature for the streusel
  • 2 Eggs large
  • 0.5 cup Sour Cream or Yogurt for moisture and tang
  • 2 cups Flour all-purpose flour for the cake
  • 0.5 cup Flour for the streusel
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract for flavor
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Ground Nutmeg
  • 0.5 cup Brown Sugar light brown sugar for the streusel topping

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Electric mixer
  • Baking Pan
  • Cooling rack

Method

Method:
  1. Step 1: Preheat your oven to 350°F (175°C). Grease your 9x13-inch baking pan with a little butter or non-stick spray.
  2. Step 2: In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas, sour cream (or yogurt), and vanilla extract until fully incorporated.
  3. Step 3: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
  4. Step 4: In a separate bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and nutmeg for the streusel. Add the room-temperature butter and mix until the mixture resembles coarse crumbs.
  5. Step 5: Pour the banana batter into the prepared baking pan, spreading it evenly. Sprinkle the streusel topping generously over the batter.
  6. Step 6: Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Step 7: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes. Then, transfer it to a cooling rack to cool completely. Slice and serve warm or at room temperature.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Don’t skip the sour cream or yogurt; it adds moisture and tang to the cake.
  • Allow the cake to cool before slicing to prevent it from crumbling.
