- Step 1: Preheat your oven to 350°F (175°C). Grease your 9x13-inch baking pan with a little butter or non-stick spray.
- Step 2: In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas, sour cream (or yogurt), and vanilla extract until fully incorporated.
- Step 3: In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and nutmeg. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
- Step 4: In a separate bowl, combine the flour, brown sugar, granulated sugar, cinnamon, and nutmeg for the streusel. Add the room-temperature butter and mix until the mixture resembles coarse crumbs.
- Step 5: Pour the banana batter into the prepared baking pan, spreading it evenly. Sprinkle the streusel topping generously over the batter.
- Step 6: Place the pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 7: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes. Then, transfer it to a cooling rack to cool completely. Slice and serve warm or at room temperature.
