Ingredients

For the Cake:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup walnuts (chopped)
  • 1 cup bittersweet chocolate chips
  • 4 ripe bananas
  • 1 cup sour cream
  • 2 eggs
  • ½ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • ½ cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • ½ cup walnuts (chopped, for topping)
For the Glaze:
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for glaze)
  • 2 tablespoons milk (for glaze)

Equipment

  • Mixing bowls
  • Measuring cups and spoons
  • Hand mixer or stand mixer
  • 9x13 inch baking pan
  • Cooling rack
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13-inch baking pan with cooking spray or butter.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon. Set aside.
  4. In a large bowl, mash the ripe bananas until smooth. Add the sugars, applesauce, sour cream, eggs, and vanilla extract. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  6. Gently fold in the chocolate chips and walnuts.
  7. Pour the batter into the prepared pan. Sprinkle the remaining walnuts on top.
  8. Bake for about 45-50 minutes, or until a toothpick comes out clean.
  9. Let it cool for 10 minutes, then transfer to a cooling rack. Prepare the glaze by whisking together the powdered sugar, vanilla extract, and milk until smooth. Drizzle over the cooled cake.

Notes

  • Use very ripe bananas for the best flavor.
  • Chill the batter for 30 minutes before baking for better texture.
  • Add mix-ins like shredded coconut or dried fruit for a twist.
  • Sprinkle cinnamon sugar on top before baking for extra flavor.
