Ingredients
  

  • 1.5 lbs chicken tenderloins cut into 1-inch pieces
  • 0.75 cup all-purpose flour
  • 1.25 cups panko breadcrumbs
  • 0.5 cup fine cornmeal
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.25 teaspoon cayenne pepper adjust to taste
  • 2 large eggs
  • 0.25 cup Frank's Hot WINGS Sauce not the regular hot sauce
  • 2 tablespoons honey
  • 0.25 cup mayonnaise I use light
  • 0.25 cup nonfat Greek yogurt may substitute mayonnaise
  • 1 teaspoon Frank's Hot WINGS Sauce for the dip

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C). This ensures that your chicken will bake evenly and develop a nice golden color.
  2. Step 2: Cut the chicken tenderloins into 1-inch pieces and set them aside.
  3. Step 3: In one bowl, mix together the flour, salt, paprika, black pepper, onion powder, garlic powder, chili powder, cumin, and cayenne pepper. In a second bowl, whisk the eggs, then add the Frank's Hot WINGS Sauce and honey. In a third bowl, combine the panko breadcrumbs and cornmeal.
  4. Step 4: Dip each piece of chicken first into the flour mixture, shaking off any excess. Next, dip it into the egg mixture, ensuring it’s well-coated, and finally, roll it in the panko-cornmeal mixture. Press down slightly to ensure the coating sticks well.
  5. Step 5: Place the coated chicken pieces on a baking sheet lined with parchment paper or a wire rack. Make sure they are spaced out to allow air circulation.
  6. Step 6: Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the coating is crispy and golden brown. Flip the chicken halfway through baking for even crispiness.
  7. Step 7: While the chicken is baking, mix together the mayonnaise, Greek yogurt, and the additional teaspoon of Frank's Hot WINGS Sauce in a small bowl. Adjust seasoning if necessary.
  8. Step 8: Once the chicken is done, remove it from the oven and let it cool slightly. Serve it with the dipping sauce on the side and enjoy your delicious Baked Popcorn Chicken!
