Ingredients
  

  • 1 pound ground chicken (or ground turkey)
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup breadcrumbs (or crushed saltine crackers)
  • 1 large egg
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon garlic powder (or 1 clove minced garlic)
  • 1/2 teaspoon onion powder (or 2 tablespoons diced fresh onion)
  • 1/2 teaspoon dried oregano
  • 1/4 cup fresh chopped parsley (chopped)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  3. In a large mixing bowl, combine the ground chicken, salt, black pepper, breadcrumbs, egg, parmesan cheese, garlic powder, onion powder, dried oregano, and fresh parsley. Mix until just combined.
  4. Using a cookie scoop or your hands, form the meat mixture into balls about 1 to 1.5 inches in diameter and place them on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until cooked through and golden brown. The internal temperature should reach 165°F (74°C).
  6. Let the meatballs cool for a few minutes before serving.

Notes

  • Experiment with different herbs and spices to add unique flavors.
  • Add chopped jalapeños for a spicier kick.
  • Store uncooked meatballs in the refrigerator for up to 2 days before baking.
  • These meatballs freeze well for up to 3 months.
