Ingredients

For the Wings:
  • 4 pounds chicken wings (flats and wing tips removed)
  • 2 tablespoons baking powder
  • 4 tablespoons butter (melted)
  • 2 tablespoons hot sauce
  • 1 serving Blue cheese dressing (for serving)
  • 1 serving Celery sticks (for serving)

Equipment

  • Baking Sheet
  • Wire rack
  • Mixing bowl
  • Brush
  • Meat thermometer

Method

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C). This high temperature is key to achieving that crispy texture we all love.
  2. Step 2: In a large mixing bowl, add the chicken wings. Sprinkle the baking powder over the wings, and toss well to ensure they are evenly coated.
  3. Step 3: Place a wire rack on top of your baking sheet. Lay the wings in a single layer on the rack, ensuring they are not touching.
  4. Step 4: Bake the wings in the preheated oven for about 40-45 minutes, flipping them halfway through.
  5. Step 5: While the wings are baking, melt the butter in a small saucepan over low heat and stir in the hot sauce.
  6. Step 6: Once the wings are done baking, transfer them to a large mixing bowl. Pour the buffalo sauce over the wings and toss well to coat evenly.
  7. Step 7: Serve the Baked Buffalo Wings immediately with blue cheese dressing and fresh celery sticks on the side.

Notes

  • Store cooked wings in an airtight container in the refrigerator for up to 3 days.
  • Reheat wings in the oven at 350°F (175°C) for about 10-15 minutes to regain crispiness.
  • For a sweet twist, try adding honey to the buffalo sauce.
