Ingredients

For the Oatmeal:
  • 2 cups old-fashioned rolled oats
  • 1-1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2 cups milk dairy, almond, or oat milk
  • 1 large egg
  • 1/3 cup maple syrup
  • 1 tablespoon unsalted butter melted
  • 2 teaspoons vanilla paste or extract
  • 2 ripe bananas cut into 1/2 inch slices
  • 1-1/2 cups blueberries fresh or frozen

Equipment

  • Mixing bowl
  • Whisk
  • Baking dish
  • Measuring cups and spoons
  • Spatula

Method

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). This ensures your oatmeal bakes evenly and thoroughly.
  2. Step 2: In a large mixing bowl, combine the old-fashioned rolled oats, ground cinnamon, baking powder, and kosher salt. Stir these dry ingredients together until well-mixed.
  3. Step 3: In another bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla until fully combined.
  4. Step 4: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix!
  5. Step 5: Fold in the sliced bananas and blueberries, ensuring they are evenly distributed throughout the mixture.
  6. Step 6: Grease your baking dish with a little butter or oil to prevent sticking. Pour the oatmeal mixture into the prepared dish, spreading it out evenly.
  7. Step 7: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
  8. Step 8: Once baked, remove the dish from the oven and let it cool for a few minutes. Serve warm, drizzled with extra maple syrup if desired.

Notes

  • Use ripe bananas for maximum sweetness and moisture.
  • If using frozen blueberries, do not thaw them to prevent excess liquid.
  • For a vegan version, substitute the egg with a flax egg and use plant-based milk.
