Ingredients
  

  • 3 to 4 clementine oranges clementine oranges peeled and segmented
  • 2 medium ripe avocados diced
  • 1/4 cup diced red onion for sweetness and crunch
  • 1-1/2 tablespoons finely diced jalapeño ribs and seeds removed for less heat
  • 1-1/2 tablespoons olive oil to enhance flavors
  • 1/4 cup finely chopped cilantro about 1/2 large bunch
  • 3 tablespoons lime juice freshly squeezed
  • 1/2 teaspoon salt to taste
  • 1/8 teaspoon pepper for seasoning
  • Tortilla chips optional, for serving

Method
 

  1. Start by peeling and segmenting the clementine oranges. Ensure to remove any seeds and pith for a smooth texture. Dice the avocados into small pieces and add them to a mixing bowl.
  2. Next, finely dice the red onion and jalapeño. If you prefer a milder salsa, remove the seeds and ribs from the jalapeño. Add these to the bowl with the avocados.
  3. Chop the cilantro finely and add it to the mixing bowl. Pour in the olive oil and freshly squeezed lime juice, then sprinkle with salt and pepper.
  4. Using a spatula or large spoon, gently fold all the ingredients together, being careful not to mash the avocados too much.
  5. Taste your Avocado Orange Salsa! Adjust the seasoning with more salt, pepper, or lime juice if needed.
  6. For best results, let the salsa sit for about 20-30 minutes to allow the flavors to meld together. Serve it chilled with tortilla chips or as a topping for your favorite dishes.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • To minimize browning, press plastic wrap directly onto the surface of the salsa before sealing the container.
