Ingredients
  

For the Dough:
  • 3 1/3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons white sugar
  • 1 teaspoon salt
  • 2 tablespoons vegetable shortening
  • 3/4 cup lukewarm water
  • 1/2 cup lukewarm whole milk
  • Vegetable or canola oil (for frying)
For Dusting:
  • 1 cup white cane sugar (for dusting)
  • 1 tablespoon ground cinnamon (for dusting)

Method
 

Instructions
  1. In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk them together until well mixed. Add the vegetable shortening and incorporate it until the mixture resembles coarse crumbs.
  2. Slowly pour the lukewarm water and milk into the flour mixture. Stir until the dough comes together, adding more flour if it's too sticky.
  3. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a towel and let it rest for 30 minutes.
  4. After resting, divide the dough into two portions and roll out each to about 1/8 inch thick. Cut into 2-inch squares.
  5. Heat 2-3 inches of vegetable oil to 375°F (190°C). Fry squares for 2-3 minutes per side until golden brown and puffed up, using a slotted spoon to drain on paper towels.
  6. In a small bowl, mix white sugar and cinnamon. Toss warm sopapillas in the mixture until well coated.

Notes

  • Ensure oil is at the correct temperature; too hot will burn them, too cool will make them greasy.
  • For puffier sopapillas, press the center of each square gently while frying.
  • Serve with honey or chocolate sauce for dipping.
  • Best enjoyed fresh, but can be frozen for later use.
