Ingredients
  

  • 2 large eggs the binding agent for your patties
  • 1/4 cup chopped red onion for a touch of crunch and flavor
  • 1/4 cup chopped dill fresh dill enhances the overall taste
  • 2 tablespoons mayo I recommend Sir Kensington for a richer flavor
  • 2 teaspoons Dijon mustard adds a delightful tang
  • 1 teaspoon Old Bay seasoning the secret ingredient that ties it all together
  • 12 ounces cooked or canned wild salmon flaked, either from 1 lb of salmon or 2 (6-ounce) cans
  • 1/2 cup panko plain or gluten-free, or you can use matzo for Passover
  • Olive oil spray to achieve that perfect golden crust
  • Lemon wedges for serving, adding a bright finish

Method
 

  1. Start by gathering all your ingredients. If you’re using fresh salmon, make sure it’s cooked and cooled, then flake it into small pieces. If using canned salmon, drain it well.
  2. In a large mixing bowl, combine the flaked salmon, chopped red onion, chopped dill, mayo, Dijon mustard, and Old Bay seasoning. Mix well until all the ingredients are evenly distributed.
  3. Crack the two large eggs into the mixture and stir to combine. Then, gently fold in the panko breadcrumbs. This will help give your patties that perfect texture.
  4. With your hands, shape the mixture into patties, about 2 to 3 inches in diameter. Aim for uniform sizes to ensure even cooking.
  5. Preheat your air fryer to 375°F (190°C) for about 5 minutes. This step is crucial for achieving that crispy exterior.
  6. Spray your air fryer basket lightly with olive oil spray. Place the salmon patties in the basket in a single layer, ensuring they don’t touch each other. Lightly spray the tops with olive oil spray.
  7. Cook the patties for 10-12 minutes, flipping them halfway through. They should be golden brown and crispy on the outside.
  8. Once cooked, remove the patties from the air fryer and serve hot with lemon wedges on the side. They pair wonderfully with a fresh salad or your favorite dipping sauce!

  • For a lighter option, substitute Greek yogurt for mayo.
  • Incorporate grated zucchini or carrots to add more veggies.
