Ingredients
  

For the Caper Mayonnaise:
  • 6 tablespoons mayonnaise preferably Sir Kensington
  • 2 tablespoons drained capers minced
  • 2 teaspoons fresh lemon juice
For the Salmon:
  • 16 ounces skinless salmon fillet cut into 4 pieces if frozen
  • 1 teaspoon kosher salt divided
  • 2 large egg whites lightly beaten
  • 1 cup seasoned panko or gluten-free panko
  • Olive oil spray for crispiness
For Assembling:
  • 4 whole wheat buns or gluten-free buns
  • 4 butter lettuce leaves for freshness

Method
 

Preparation Steps:
  1. In a mixing bowl, combine the mayonnaise, minced capers, and fresh lemon juice. Stir until well mixed.
  2. Sprinkle the skinless salmon fillets with half of the kosher salt.
  3. In a separate bowl, beat the egg whites. Dip each piece of salmon into the egg whites, ensuring they are well coated. Then, roll the salmon in the seasoned panko.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil spray. Place the breaded salmon pieces in the basket and spray the tops lightly with olive oil spray. Air fry for about 10-12 minutes.
  5. While the salmon is cooking, lightly toast your buns. Spread the caper mayonnaise on the bottom half of each bun, add a piece of crispy salmon, top with a butter lettuce leaf, and cover with the top bun.
  6. Your Air Fryer Salmon Fish Sandwich is ready to be served!
