Directions:
- Begin by preheating your air fryer to 350°F (175°C).
- In a small skillet, heat the olive oil over medium heat. Add the minced onion and sauté until it becomes translucent, about 3-5 minutes.
- In a large mixing bowl, combine the ground beef, sautéed onion, egg, bread crumbs, ketchup, Dijon mustard, seasoning salt, garlic powder, parsley, and milk. Mix until just combined.
- Transfer the mixture into a loaf pan or shape it into a loaf on a piece of aluminum foil.
- In a small bowl, mix together the topping ingredients: ketchup, brown sugar, Dijon mustard, and garlic powder. Spread this mixture over the meatloaf.
- Carefully place the meatloaf in the air fryer basket. Cook for about 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
- Once cooked, remove the meatloaf from the air fryer and let it rest for 10 minutes before slicing.
Notes
- Feel free to substitute ground beef with ground turkey or chicken for a leaner option.
- Use crushed crackers or oats instead of breadcrumbs for a gluten-free version.
- Store leftovers in an airtight container in the fridge for up to 3-4 days.
