Ingredients
  

For the Meatloaf:
  • 1 medium onion minced
  • 1 tbsp olive oil
  • 1 pound ground beef
  • 1 large egg
  • 1/4 cup bread crumbs
  • 1 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp seasoning salt
  • 1/2 tsp garlic powder
  • 1 tbsp freshly chopped parsley
  • 1/2 cup milk
For the Topping:
  • 2 tbsp ketchup
  • 2 tsp brown sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder

Method
 

Directions:
  1. Begin by preheating your air fryer to 350°F (175°C).
  2. In a small skillet, heat the olive oil over medium heat. Add the minced onion and sauté until it becomes translucent, about 3-5 minutes.
  3. In a large mixing bowl, combine the ground beef, sautéed onion, egg, bread crumbs, ketchup, Dijon mustard, seasoning salt, garlic powder, parsley, and milk. Mix until just combined.
  4. Transfer the mixture into a loaf pan or shape it into a loaf on a piece of aluminum foil.
  5. In a small bowl, mix together the topping ingredients: ketchup, brown sugar, Dijon mustard, and garlic powder. Spread this mixture over the meatloaf.
  6. Carefully place the meatloaf in the air fryer basket. Cook for about 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Once cooked, remove the meatloaf from the air fryer and let it rest for 10 minutes before slicing.

Notes

  • Feel free to substitute ground beef with ground turkey or chicken for a leaner option.
  • Use crushed crackers or oats instead of breadcrumbs for a gluten-free version.
  • Store leftovers in an airtight container in the fridge for up to 3-4 days.
