Ingredients
  

  • 3 large ripe bananas (about 1 cup mashed)
  • 1 cup unsweetened almond butter (240g)
  • 2 cups rolled oats (180g)
  • 3/4 tsp sea salt
  • 1 1/2 cups fresh blueberries (150g)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Line a 9x9-inch baking dish with parchment paper or lightly grease it.
  3. Step 3: In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Step 4: Add the unsweetened almond butter to the mashed bananas and stir until well combined.
  5. Step 5: Mix in the rolled oats and sea salt until everything is well incorporated.
  6. Step 6: Gently fold in the fresh blueberries, being careful not to crush them.
  7. Step 7: Pour the mixture into the prepared baking dish and spread it evenly.
  8. Step 8: Bake for 25-30 minutes, or until the edges are golden brown and a toothpick comes out clean.
  9. Step 9: Cool for about 10 minutes, then lift out and cool completely before slicing.

Notes

  • Store bars in an airtight container for up to 3 days at room temperature.
  • For longer storage, freeze individually wrapped bars for up to 3 months.
  • Feel free to substitute almond butter with any nut or seed butter.
