  • 1 pound thinly sliced chicken breasts, thighs, or ground
  • 2 cups frozen stir fry veggies
  • 1/4 cup chopped scallions for garnish
  • 2 tablespoons toasted sesame seeds for garnish
  • 1/4 cup fresh chopped cilantro or Thai basil for serving

Instructions
  1. Step 1: Cook the Udon Noodles - Start by bringing a large pot of water to a boil. Once boiling, add the dried udon noodles and cook according to package instructions, usually around 5-7 minutes. Once cooked, drain and set aside.
  2. Step 2: Prepare the Sauce - In a small bowl, whisk together the tamari or soy sauce, chili paste, rice vinegar, lemon juice, and honey until well combined. Set this sauce aside for later.
  3. Step 3: Sauté the Chicken - In a large skillet or wok, heat the toasted sesame oil over medium-high heat. Add the thinly sliced chicken and cook until browned and cooked through, about 5-7 minutes. Make sure to stir occasionally for even cooking.
  4. Step 4: Add Garlic and Ginger - Once the chicken is cooked, add the chopped garlic and fresh chopped ginger to the skillet. Sauté for about 1 minute until fragrant, being careful not to let the garlic burn.
  5. Step 5: Incorporate the Veggies - Add the frozen stir fry veggies to the skillet. Stir everything together and cook for another 3-4 minutes, or until the vegetables are heated through.
  6. Step 6: Combine Everything - Add the cooked udon noodles and the prepared sauce to the skillet. Toss everything together gently, ensuring that the noodles and chicken are well coated with the sauce. Cook for an additional 2-3 minutes to heat through.
